Baked Atlantic Cod with Bell Pepper and Tomato Sauce

Ingredients

To marinate cod:

  • 800g atlantic cod (frozen at sea)
  • 2 tbs olive oil
  • 1/4 cup lemon juice
  • 1 garlic clove
  • 1 tsp salt
  • 1/2 tsp pepper

 

To prepare the sauce:

  • 2 tbs olive oil
  • 1 large onion
  • 1 red bell pepper
  • 150g cherry tomatoes
  • 1 garlic clove
  • 1 can dices tomatoes
  • 1 tbs salt
  • 1 tbs pepper
  • 1 tbs chili powder

 

For the final preparation:

  • 3-4 fresh thyme springs

 

For serving:

  • 1-2 parsley springs
Method

01.

Cut the Atlantic cod, add olive oil, lemon juice, chopped garlic, salt, pepper and marinate for 30 minutes.

Meanwhile preheat a pan, add olive oil, than add cutted onion, cutted red bell pepper, cutted cherry tomatoes, chopped garlic, diced tomatoes, salt pepper and chilli powder.

Take a baking dish and add pour the sauce in there.

 

04.

Put the marinated Atlantic cod on the top of the sauce, add fresh thyme springs.

 

05.

Bake at 200° for 15-20 minutes.

 

06.

Serve it on a plate: first sauce, then Atlantic cod on the top.

 

07.

Add chopped parsley.
