To marinate cod:
- 800g atlantic cod (frozen at sea)
- 2 tbs olive oil
- 1/4 cup lemon juice
- 1 garlic clove
- 1 tsp salt
- 1/2 tsp pepper
To prepare the sauce:
- 2 tbs olive oil
- 1 large onion
- 1 red bell pepper
- 150g cherry tomatoes
- 1 garlic clove
- 1 can dices tomatoes
- 1 tbs salt
- 1 tbs pepper
- 1 tbs chili powder
For the final preparation:
- 3-4 fresh thyme springs
For serving:
- 1-2 parsley springs
